1Preheat oven to 350 degrees F (175 degrees C)

2Line 12 muffin cups with Prosciutto wrapping it around and filling the bottom to ensure no holes.

3Beat eggs in a large bowl. Stir in coconut milk, salt and pepper. Mix in spinach and Cheddar cheese. Spoon by 1/3 cupfuls into muffin cups.

4Top with cherry tomatoes.

5Bake in preheated oven until a knife inserted near the center comes out clean, 20 to 25 minutes.

3/4 Cup Coconut Milk

3/4 Cup Shredded Cheese

1/2 Cup Baby Spinach

12 Cherry Tomatoes, Halved
